Cream Cheese, Garlic, & Veggie Bagel Spread 
My sister and I love going to Lewisburg, PA when we get the chance. Lewisburg is home to Bucknell University, so it’s a cute little college town! One of our favorite places to visit is a little bagel shop. This bagel shop makes the most amazing bagel spreads. They have everything from sweet Oreo cookie spread to a more savory vegetable spread. I recently tried the vegetable spread and fell in love! I knew I needed to recreate the recipe and that’s exactly what I did! In my opinion, it’s even better than the bagel shop. Not only is it delicious, but it has a super yummy superfood blend in it. That totally cancels out the fatty cream cheese and carb-filled bagels, right? So, not only does this taste good, but it’s sort of good for you due to the superfood blend.
This spread has become a staple in our home. My husband has been asking me to make it constantly. Thankfully, it’s super easy to make so I don’t mind. And, if I’m being honest, I’ve been craving it just as much as he has! Plus, I like that I can make a batch of it at the beginning of the week and have breakfast all week for everyone. At this point, we might have to buy some stock in a bagel company. It’s so good that we’ve been eating it for both breakfast and late night snacks! I will warn you though – this cream cheese will give you some wicked breath! You might need to brush your teeth directly afterward! The other downside to this recipe is that since it’s so amazing, my husband is constantly toasting bagels. That means that he’s also messing with the toaster dial! There are two things that are totally non-negotiable in a marriage – no touching the toaster dial, and no touching the thermostat! That may have even been in my wedding vows! Just kidding!

Once in a blue moon, when I decide to torture myself, by cutting carbs out of my diet for a week or two this salad is a life saver. It gives me all the flavors I enjoy in a big meaty hoagie without all the carbs. I know the cheese and salami are fattening but I somehow justify it to myself since I am not layering it all in a carb infested hoagie roll. Also, the fact that this Italian Salad is seasoned to perfection so there really is no need for a fatty dressing is another one of my justifications. Of course, if you feel the need for dressing, a little oil works well. If I were left at home alone with this salad I am confident it would not see the dawn of a new day. But don’t think you have to be on a diet to make this salad. My husband enjoys this salad just as mush as I do and he has never dieted a day in his life! Every time I make this salad I have to leave a fork on the counter. If I didn’t I would have a sink full of forks from me returning to the fridge every 20 minutes to steal a bite. This recipe is also a great way to use up some of those garden tomatoes. I do not care for tomatoes but my husband loves them so I add them anyway. I was raised in a home where if you didn’t like something you picked it out. =p

Healthy Banana Cookies


Banana 1

These cookies are light and fluffy, they almost remind me of a muffin in texture. This recipe is a result of having 2 old banana’s and being too lazy to find a recipe. =P


* In this recipe you can use peanut butter or almond butter / flour or wheat flour

Healthy Banana Cookies 


2 – ripe banana’s

1/4 – Cup almond butter OR peanut butter

1/2 – Tsp. Vanilla

1 – Egg

1 – Cup whole wheat flour OR  A.P Flour

1/2 – Tsp. baking powder

1 1/2 – Tbsp. sugar substitute ( splenda, truvia, is what I normally use)

2 – Tbsp. Dark Chocolate Chips



Pre heat oven to 350 degrees

Place all ingredients in a medium size mixing bowl except dark chocolate chips. Mix well, then mix in dark chocolate chips. Drop by teaspoons full onto a cookie sheet that has been either greased or lined with parchment paper. Bake for 8-10 minutes.

Butternut Squash Cookies

I am always trying to come up with ways to sneak healthy foods into my sons diet. These butternut squash cookies were a success, he loved them and got to enjoy a sweet while still getting some benefits from the butternut squash. =)


Garlic Chicken Burgers


    Weighing in just under 400 calories I give you the Garlic Chicken burger! Makes 3 larger patties (if you are using something like Kaiser rolls) or 4 smaller patties (if you are using normal hamburger bun)


1 pound ground chicken

1 Tbsp. mayo

1 Tbsp. fresh parsley

1/2 clove garlic clove minced

1/2 tsp. Worcestershire sauce

salt and pepper to taste

1/4 cup cheddar cheese

Olive oil to drizzle in frying pan

Lettuce & tomato for topping



Mix all ingredients together except for the olive oil,lettuce, and tomato. Form into 4 patties, or 3 patties if using larger rolls. Next drizzle a frying pan with a little bit of olive oil,just about a table spoon. Turn stove onto a medium high heat wait a few minutes until pan is hot. Next cook burgers until cooked through. Cook about 15-20 minutes depending on your stove. It is very important to make sure they are cooked the whole way through… I usually cut one in half for a test to make sure it is cooked properly.

Next for the bread… I used a whole wheat roll and I put a mayo mixture on both sides drizzled my frying pan with a little more olive oil. and toasted them up.

Mayo mixture:

1/4 Cup mayo

1 tsp. fresh parsley

1/2 garlic clove minced pinch of pepper and salt

** If you like more mayo, double the recipe for the mayo mixture but this will affect calorie count.

Super Hero Pasta


If you are looking for a fun pasta to  take on a picnic you will have to try my tangy super hero pasta!


I have decided to name this super hero pasta in honor of my son. He is 2 years old and has been asking for a super hero outfit, so… I thought since this pasta is green and made from spinach the name is fitting. 🙂


8 Cups raw spinach

1 cup Italian dressing

1/2 cup shredded Parmesan cheese

5 slices of bacon (cooked & cut into small pieces)

1-2  boneless skinless chicken breasts ( fully cooked and sliced into small bite size pieces)

1 cup of cherry tomatoes

1 cup pearl mozzarella cheese

1 – 12 oz. box penne noodles cooked & cooled (cook according to al dente directions)


* Adding the chicken is option but makes it into more of a meal rather than a side. If I am making this as a side I leave the chicken out. =)


Using a food processor, add 4 cups of raw spinach, 1 cup of Italian dressing, & 1/2 cup of shredded Parmesan cheese. Process until a sauce is formed. Add the other 4 cups of raw spinach and process until blended into the sauce. If you have a food processor that is big enough you can just add everything at one time ( mine only holds 4 cups of raw spinach so I have to do it this way). In a large mixing bowl add cooked pasta. Next add 1/2 of the green spinach sauce to the noodles along with bacon slices, chicken pieces, cherry tomatoes & pearl mozzarella cheese. Cover and refrigerate both the pasta and the green spinach sauce. Pour the rest of the sauce over the pasta about 30 minutes before serving.

Versatile Chocolate PB Mousse (low-carb)


This is my new go-to recipe. It is so simple to make and can satisfy just about any craving. If I am hungry for ice cream,  I simply put the mousse into a small ice cream cone topped with a little whipped cream, 1 almond smashed, and of course a cherry. If I am hungry for a pie , I make a crust by putting one cup of almonds in a food processor and then adding 1-2 Tbsp. of melted butter to the crushes almonds, push the mixture into a greased pie pan and bake at 400 for about 5 minutes or until I smell the almonds, then I fill it up with my mousse. And sometimes I like just like to eat a big bowl of mousse with some whipped cream.



2 C. heavy cream

1/2 a  8oz. tub of Mascarpone cheese

2 Tbsp. peanut butter

1 cap full of Madagascar vanilla (pure vanilla extract will do)

1 Tbsp. Hershey dark cocoa

2 tsp. truvia (or any sugar substitute)


In a medium/large mixing bowl add all ingredients. With an electric mixer start on low , once everything is mixed well turn it to high. Mix until mixture is stiff and forms a mousse. Enjoy!

Low-Carb Dark Chocolate Air Cookies



6 egg whites

2 Tbsp DaVinci Gourmet zero calorie french vanilla syrup(Found in stores w/ dry coffee creamers)

2 Tbsp Hershey’s Dark Cocoa

2 Tsp. Madagascar vanilla extract

2 tsp. truvia

4 Tbsp dark chocolate chips



In a medium size mixing bowl add egg whites, vanilla, French vanilla syrup, and truvia. Using a hand mixer, mix on high speed until egg whites become fluffy. They should look like this:


DSC00505Next add the cocoa, mix again until everything is blended well. Next add 4 Tbsp of chocolate chips and fold them into the mixture using a wooden spoon. Drop by Tbsp. full onto a cookie sheet that has been covered with wax paper.

DSC00506Bake at 250 degrees for about 45-50 minutes. Let cool 5-10 minutes before trying to take them off the wax paper. To do this you have to gentle peel them off putting one hand under the wax paper and the other hand to peel the cookie off . Enjoy! 🙂
