I really should be cleaning right now, but instead, I am dreaming up new ideas for taco recipes. At this point, the scent of tacos may be ingrained into the walls of my home. Perhaps that is why I wake up in the middle of the night craving tacos? The scent is so powerful that I think I am waking up to a delicious taco meal. Sadly, that has yet to happen. However, when I’m not dreaming of tacos, I am testing out and photographing new taco recipes.

One of the creations I made were these amazing Feta & Balsamic Steak Tacos. My family may be tired of eating so many tacos this month, but this recipe is such a unique deviation from normal tacos, that I don’t think they quite minded. I’ve given up on my husband being a taco fan, but since my son’s taste buds are still developing, I’m holding out hope that he’ll be a taco super-fan like me!

 I could honestly eat about 10 of these tacos without even thinking about it. I did add in some spring mix lettuce, so that make’s it healthy, right? This recipe is so easy to make! If you’re looking for a light recipe that packs a lot of flavor into each bite, this is it. I used shaved beef, however, steakums would be a good substitute. The cream cheese and honey spread balances out the acidity from the balsamic and the drizzle of lemon adds another delightful layer of refreshing goodness. I added some chili powder to the shell to take the shell from plain jane to WOW!

 Speaking of the shell, that was the hardest part of the recipe. Getting the shell to fry and shape just right was a little difficult. I did find this taco press on Amazon that should alleviate those issues. It definitely looks like a worthy investment, especially if you’re a taco addict like me!

I have to admit, I’m going to be kind of sad when taco month is over. I’ve been having too much fun listening to Ricky Martin and eating tacos. I’m pretty sure my neighbor has overheard me singing Livin’ La Vida Loca in the shower a time or two this month. I’m certain she’s used to it by now. I think I broke her in back at Christmas time by singing Dean Marin’s it’s a Marshmallow world at the top of my lungs. I bring her food so I think that should make up for all the singing, at least that’s how I justify it.

It’s not her fault she moved in next to a fruitcake like me. I tried to be on my best behavior for a month or so, but eventually, the real me came out. Now I’m running around the yard swatting wasps with my new tennis racket bug zapper in my pajamas and she doesn’t even bat an eyelash. I guess it’s the norm now, “oh, that’s just Emily”. Hey, to each his own, am I right?

Hola! Tomorrow is Cinco De Mayo so what better month to celebrate tacos then May?! I’m starting the month off with these Honey battered Chicken Tacos. I know it sounds weird, but trust me, they’re delicious! This recipe actually came from my mom, I too, thought it sounded a little strange until I tried them. One bite had me thinking I was Ricky Martin and Livin’ La Vida Loca. Except my lips were more of an avocado green than a devil red.

Reality did eventually set in. I realized that I wasn’t Ricky Martin and moving my hips that way should be outlawed… At least in my home. You, however, are free to move your hips anyway you’d like as long as it doesn’t get you arrested or send you to the ER. If you choose to move your hips in these such ways please remember I do have a disclosure and you are eating at your own risk.

Well, now that you’ve been warned and I’ve exposed my age by referencing Ricky Martin, let’s talk a little more about these tacos. Are you looking for a quick, foolproof meal for those busy summer nights? Well, this is it! If you can cook chicken tenders in the oven and do a little slicing and dicing then making these delicioso Honey Battered Chicken Taco’s is not out of reach for you. When the bold flavors from the black bean salsa fuse with the sweetness of the chicken your taste buds will be doing a dance all of their own. April, a month filled with baseball and lots of biscuit dough! 

Baseball season has officially started in the Dillman household. If you are like me, and also have kids starting baseball, you know that making fancy suppers on ball nights is next to impossible. Because of this, I am focusing the entire month of April on biscuit dough recipes starting with these Chili Cheese Dog Stuffed Biscuits. I need meals I know my family will eat and are a quick clean up so we can pack up and head to the ballfield!



Can I be real for a minute or two?

I know this is a way off topic and has nothing to do with Chili Cheese Dog Stuffed biscuits but I have been working on typing up posts all day. This is where I struggle. My grammar is crap and I’m not always good with my words but I’m trying. I feel like I have been climbing the same mountain for years. More like crawling, actually. But you know what? I’m going to keep climbing this Mountain because I feel this is where God wants me.

But He doesn’t want me to stay in the same place crawling and struggling nor does He want you to. He wants us to succeed and prosper (A few examples – Jeremiah 29:11, Job 36:11, Deuteronomy 29:9). And if we are going to succeed and prosper we have to step outside of our comfort zone and take risks; something I am not always good at. My struggles mainly come from fear and self-doubt. Sometimes I wish I could step outside of myself for a few seconds just to shake myself and say “it’s okay girl, God’s got you!” And then I would take a deep breath and everything would be fine.

I saw two quotes this week that really stuck with me. The first one was by Rachel Hollis  “Someone else’s opinion of you is none of your business.” Whoa! I am in the middle of reading her book Girl, wash your Face and it is excellent! The second quote that really stuck with me this week was by Havilah Cunnington. She said, “If what you see in the mirror is an example of God’s Passion and Creativity, but you hate it, how can you really trust Him with your life? You are an example of His great work”.

Maybe your reading this thinking, I’m here for a recipe, not your life story lady. And that’s fine. But just maybe someone is going through this same thing and God brought them hear threw a recipe? Maybe it’s you? Maybe this is God’s way of shaking you and saying “It’s ok, girl. I got you!” So if this is you, why don’t you join me? We will all take a deep breath, eat chili cheese dog stuffed biscuits and keep climbing till we make it to the top. 😉

As a kid, I was never really a huge fan of lasagna. My mom used to hide onions in it and then swear up and down she didn’t put any in. Yeah, okay mom (insert eye rolling emoji). I remember folding my garlic bread in half and stuffing it with lasagna or spaghetti to mask the taste of the onions.  But as I got older I learned that if I made Lasagna my way, extra mozzarella, hold the onions,  I actually loved it! And let’s not forget a nice thick slice of garlic bread or Texas toast to slop up the extra sauce. For me, this is actually the best part of the meal!

(*I know that half a pound of ground beef does not seem like a lot of meat but trust me it’s PLENTY. There will be enough to make 4 sandwiches, I promise 😉 )

After pondering this for awhile I thought to myself why wait until the end of my meal to fully enjoy it? Why not enjoy every bite? So I decided to stuff loads of lasagna meat sauce and extra mozzarella between two slices of Texas toast. It was AMAZING! And probably one of the quickest warm meals I have made in awhile. Every bite left me totally satisfied and wanting more. I had to stop myself from eating another sandwich… it was so tempting. If you decide to eat two there will be no judgment coming from me, I totally get it.

Side Note: When making these sandwiches it is very important you do not overcook the texas toast. If you do, you’re sandwich’s will be very hard to eat. Since the texas toast will get wrapped in foil and go back in the oven I use the lesser cooking time of the Texas Toast package.

Brain Storming with Mom

If you read last weeks DIY post how to dye coffee filters, you know this months recipes will be all about sandwiches. Because baseball season’s upon us I wanted to focus on meals that were quick and easy. Sandwiches seemed to be the perfect fit. Although, I didn’t want your basic grilled cheese or Sweet Lebanon bologna with mustard and chips ( yes, that’s a thing here in PA). So I went to my moms and we came up with some pretty stellar ideas. Starting with this Oven Roasted Chicken Club on a Bagel. I explained to my mom that I had to have at least one bagel sandwich on the blog this month. There is just something about loading a bagels with lunch meats, cheeses, and sandwich toppings that I just absolutely LOVE!

This entire sandwich is just one huge flavor bomb that which will leave your taste buds begging for more. The bottom half of the bagel is smothered with roasted red paper hummus, which leaves just the right amount of bite. A little spice but not too much. This sandwich is stuffed with all kinds of goodies such as Chicken  lunch meat, cheese, lettuce, tomato, onion, and  bacon. We then decided it needed a big glob of one of our all time favorite dips on the top, spicy ranch dip. Adding the dip just adds a notably cool element to the sandwich that was much needed. This sandwich is definitely a keeper and I will be making it over, and over, and over again.

For the past 4 years we have hosted Christmas dinner at our house. My family comes early Christmas morning and the house is instantly filled with laughter as we sip our coffee and open gifts . Normally, for breakfast, we just indulge in left over cookies and pie from the previous nights Christmas eve party. This is remarkably satisfying but I have always wanted to make Christmas breakfast for everyone to enjoy. Something they would look forward to Christmas morning. I want the house to smell like Christmas when they walk in.

Keep it Simple

Whatever I choose to make has to be something quick and easy considering I also have to prepare my turkey for Christmas Dinner. Thankfully, I found this recipe for cinnamon toast balls and have slightly adapted it into what I like to call French toast Bites. French toast bites are baked and it frees up my stove top so there is no need to hover over the stove watching them. Let’s face it, Christmas is for spending time with family not in front of a hot stove.




To make your own French toast bites follow these simple step by step instructions. (Recipe Below instructions)

First butter one side of the sandwich bread:

Sprinkle each bread slice generously with cinnamon sugar mixture: You can buy this already made or make your own by adding 1 tablespoon of cinnamon to 1/2 cup of sugar.

 Pull corners together and smush into a ball:

Scalloped Potatoes & Hamburg Bake

Listen, I’ll be honest with you, I am terrible at coming up with names for my recipes. I just call them as I see them. When I started this blog all I knew was that I could cook, I didn’t realize that there were so many different elements to blogging. Along with cooking I also had to learn photography & improve my semi non existing writing skills. So bare with me as I learn. I am currently reading a book by Anne Lamott called Bird By Bird. I will warn you there is some foul language in the book. I am not finished with the book yet but basically she is showing me how to break down my writing into one category at a time and quit the other voice’s in my head so I can deal with one voice at a time. In one particular part of the book she asks you to close your eyes and imagine all those voice in your head are mice. She then says to to put each mouse (voice) in a separate jar so you can sort through the voices one by one. I know that sounds confusing but it actually does help, a lot!

Ok, that’s enough about my writing skills. Lets talk about this Scalloped Potatoes & Hamburg Bake! So this recipe basically came to be out of pure laziness. My husband said he wanted a meatloaf and every time I think meatloaf I think scalloped potatoes as a side. In my mind they go together like Peanut butter and Jelly, like coffee and mornings, like me and burlap. You get it. I had everything ready to go, the potatoes laid out, hamburg thawed, oven preheated. But then I got lazy, really lazy. I thought, forget it. I wasn’t in the mood to make all that but now I was now craving scalloped potatoes and my husband still wanted something with ground beef. So I thought to myself, I know, I’ll just throw the ground beef in with the potatoes. Perfect, right? wrong. To feel good about myself as both a wife and a mother I knew I had to add a veggie. I thought about making a veggie on the side but that would mean another dirty dish and I just wasn’t having it. I found a bag of peas in the freezer tossed them in and called it a day.

Baked Italian Hoagie Sandwiches

Make these Baked Italian Hoagie Sandwiches for your next family game night or party. Not only are they quick and easy to make but they are also delicious. I have been making these for awhile and they are always a huge hit!

Ingredients:

1  Loaf of Italian Bread

6-7 slices of Deli ham ( Thinly sliced)

8 slices of Hard Salami ( Thinly Sliced)

8 slices of provolone cheese

3-4 Tablespoons of butter

Mayo

Shredded lettuce ( 1 small bag)

1 tomato ( sliced)

1/2 onion ( sliced)

banana peppers ( optional)

Italian Dressing or Oil

Salt & Pepper

Garlic Powder

Directions: 

Preheat oven to 350 degrees.
Slice loaf of Italian bread in half but do not slice completely through. Spread the insides of the bread with butter and put on a cookie sheet buttered sides down. Bake at 350 degrees for 10 minutes or until buttered sides are slightly toasted. Leaving the bread on the cookie sheet, flip the bread so buttered sides are facing up and add as much or as little mayo as you like. Then begin to evenly load the hoagie with ham, salami, and cheese ( in that order). Bake at 350 degrees for 5 minutes or until cheese is melted. Take it out of the oven and load it up with lettuce, tomato, onion, and banana peppers. Sprinkle with salt, pepper, and garlic powder and drizzle with Italian dressing or oil. Cut into sandwich size pieces and serve.

When it comes to cooking on the Grill the struggle is REAL especially when it comes to meat. It seems I am either over-cooking it or undercooking it and, of course, you can’t serve under-cooked meat so it then goes back on the grill until I have achieved the polar opposite, a burnt slab of meat. So this year I have decided enough is enough and went to the pro, my brother. This guy can  seriously cook anything on the grill. His burgers alone are #drool worthy. So this year I am going to find out all of  his secrets starting with his Chicken on the Grill. In this particular recipe, my brother used chicken leg quarters but he has also used this method of cooking on legs & thighs and chicken breasts. The cooking times will vary depending on what cut of chicken you decide to use.

Uncle Chuck’s Chicken on the Grill  

Ingredients:

8-10 Chicken quarters

1 – stick Butter

2 (1/2) – 3 – Cups Vinegar

Garlic Powder to taste

salt & Pepper to taste

 

Directions:

Turn grill to high (or 500 degrees), once it reaches 500 degrees clean it off good with grill brush. Once the grill is cleaned turn the heat down to 350 degrees ( medium high). On the stovetop in a small/medium sized sauce pan, on medium heat, add butter, vinegar, garlic powder, salt & pepper. Cook till butter is melted, stirring occasionally. Once grill has reached the correct temperature of 350 degrees place raw chicken halves on the grill and baste them with vinegar & butter mixture. Close the lid to the grill and cook chicken for 1 to 1(1/2) hours or until chicken has reached a safe temperature of 170-F (77-C) degrees, basting every 15 minutes.
