While grocery shopping this past week I discovered that bananas were on sale for .19 cents a pound. I knew this would be a great time to stock up for recipe testing, so I did. Do you remember that delicious chocolate whoopie pie cake I posted a while back? Well, I thought, how good would a banana whoopie pie cake be? So I rearranged a few ingredients, and to my surprise, the recipe turned out perfectly on the very first try. That doesn’t happen often,but when it does I celebrate!

This banana whoopie pie cake is everything that it should be. The cake is moist and banana-ie (I know that’s not a word but it should be!). And the filling is sweet with a hint of vanilla. These cakes are so easy to make, the hardest part is flipping the one cake on top of the other. You wanna know what the secret is to getting one cake evenly on top of the other? A cake prayer. Mine goes a little something like this: Please, Lord! Please let this turn out! Please! Works every time.

Mom’s Fruit Salad Recipe 

My Mom’s Fruit Salad Recipe is the perfect recipe for all your summer gatherings. My mom makes this a lot in the summer and I can see why! It only takes about 5 minutes to whip up and is also budget friendly. Plus the only dishes you will dirty is the bowl you use, a knife, and a spoon, so the clean up is a breeze. Who wants to be standing in the kitchen slaving over a hot stove and a sink full of dishes in the summer anyways? Not me, that’s for sure!

Ingredients:

2 –  ( 29 oz) Cans Fruit Cocktail

2 – ( 15 oz) cans mandarin oranges

1 –  jar Maraschino Cherries

1 –  ( 15.5 oz) container strawberries with syrup ( or sugar), Thawed

2 –  Ripe Bananas

Directions: 

Pour all ingredients ( entire cans, juice and all) , except bananas, in a large serving bowl and gently mix. When ready to serve, slice bananas and add them to the fruit salad. Store in the Refridgerator.

*If you can not find Strawberries with syrup or sugar – Buy a bag of frozen strawberries and sprinkle them with sugar and let them thaw in the fridge overnight. They should make their own syrup that way.

Healthy Banana Cookies

Banana 1

These cookies are light and fluffy, they almost remind me of a muffin in texture. This recipe is a result of having 2 old banana’s and being too lazy to find a recipe. =P

 

* In this recipe you can use peanut butter or almond butter / flour or wheat flour

Healthy Banana Cookies 

Ingredients:

2 – ripe banana’s

1/4 – Cup almond butter OR peanut butter

1/2 – Tsp. Vanilla

1 – Egg

1 – Cup whole wheat flour OR  A.P Flour

1/2 – Tsp. baking powder

1 1/2 – Tbsp. sugar substitute ( splenda, truvia, is what I normally use)

2 – Tbsp. Dark Chocolate Chips

 

Directions: 

Pre heat oven to 350 degrees

Place all ingredients in a medium size mixing bowl except dark chocolate chips. Mix well, then mix in dark chocolate chips. Drop by teaspoons full onto a cookie sheet that has been either greased or lined with parchment paper. Bake for 8-10 minutes.
