While grocery shopping this past week I discovered that bananas were on sale for .19 cents a pound. I knew this would be a great time to stock up for recipe testing, so I did. Do you remember that delicious chocolate whoopie pie cake I posted a while back? Well, I thought, how good would a banana whoopie pie cake be? So I rearranged a few ingredients, and to my surprise, the recipe turned out perfectly on the very first try. That doesn’t happen often,but when it does I celebrate!

This banana whoopie pie cake is everything that it should be. The cake is moist and banana-ie (I know that’s not a word but it should be!). And the filling is sweet with a hint of vanilla. These cakes are so easy to make, the hardest part is flipping the one cake on top of the other. You wanna know what the secret is to getting one cake evenly on top of the other? A cake prayer. Mine goes a little something like this: Please, Lord! Please let this turn out! Please! Works every time.

Chocolate Banana Loaf Cake 

I sort of have a thing for cake box desserts such as this Chocolate Banana Loaf Cake. They are just so easy to make and usually only require a few ingredients. I especially love this recipe because it makes 2 cakes. Keep one for yourself and give one away to a friend or neighbor. This is also a great recipe to use up those last few bananas before they go bad, which is rare in our house because my son LOVES bananas. Not to mention the way these cakes make the house smell while they are cooking! No need for fancy potpourris when you are cooking this.

 Chocolate Banana Loaf Cake

Ingredients:

1 – Box Devils Food Cake Mix

1 – Box Instant Chocolate pudding (3.9 oz.)

2 – Bananas (Ripe, how they look when you make banana bread)

2 – tsp. Instant Coffee

1 – Cup Milk

4 – eggs

Directions:

Preheat oven to 350 degrees

First mash the bananas. Next, pour in the cake mix, instant pudding, instant coffee, and milk, mix well. In a separate bowl add 4 eggs and give them a few whisks; pour whisked eggs in with the rest of ingredients. Mix well. Split the batter between 2 well-greased loaf pans. Bake at 350 degrees for 35-40 minutes or until inserted toothpick comes out clean. Let loaf cakes cool for about 10 minutes then turn out on a clean surface to let them finish cooling. Once cakes are completely cool glaze them.

 


Peanut Butter Cookie S’mores

S’mores are my FAVORITE summer food hands down. I decided to throw some of my favorite flavors together to make one stupendous S’more.  So, today’s #CookieMonday post isn’t so much a recipe but more of a technique to making a yummy S’more.

What you will need:

– Some good peanut butter cookies (homemade, slice and bakes, or already made… doesn’t matter as long as there good!)

– Marshmallows for toasting

– Hazelnut spread ( I used Nutella)

– A few banana’s depending on how many you are making

 

What to do:

– Spread 2  peanut butter cookies with Nutella on one side, use as MUCH or as little as you want =P

– Toast up your Marshmallow to your liking! ( I like mine burnt but for the sake of a good photo I browned it) Place it on one side of the cookie that has been spread with Nutella.

– cut 4 slices of banana and lay them on the other side of the cookie that has been spread with Nutella.

– Squish it together and take big bites that leave chocolate and marshmallow smeared all over your face =p

Healthy Banana Cookies

These cookies are light and fluffy, they almost remind me of a muffin in texture. This recipe is a result of having 2 old banana’s and being too lazy to find a recipe. =P

 

* In this recipe you can use peanut butter or almond butter / flour or wheat flour

Healthy Banana Cookies 

Ingredients:

2 – ripe banana’s

1/4 – Cup almond butter OR peanut butter

1/2 – Tsp. Vanilla

1 – Egg

1 – Cup whole wheat flour OR  A.P Flour

1/2 – Tsp. baking powder

1 1/2 – Tbsp. sugar substitute ( splenda, truvia, is what I normally use)

2 – Tbsp. Dark Chocolate Chips

 

Directions: 

Pre heat oven to 350 degrees

Place all ingredients in a medium size mixing bowl except dark chocolate chips. Mix well, then mix in dark chocolate chips. Drop by teaspoons full onto a cookie sheet that has been either greased or lined with parchment paper. Bake for 8-10 minutes.
