Today I am sharing with you my brother’s recipe for hash brown casserole. He can cook, too! It kinda runs in the family. Although, he know’s I am the BETTER cook! (haha) But honestly my brother is such a great guy; I can always count on him. I always tell people he is my toughest critic; mainly because he is honest… brutally honest. If I want to know the truth about one of my recipes I just make it for him. Do you want to know how I have coded how good a recipe is when letting him taste it? Well… I am going to tell you anyway =p Here it is: 1.) Takes a bite, says “eww” – I know now this recipe is no good. 2.) takes a bite looks at me then goes in the room to continue eating – That means it’s good but could use a little tweaking. 3.) Takes a bit looks at me nods his head in approval and says “it’s good” then sometime in the week to follow he will ask when I am making that particular dish again- This means it is Fan- Freaking-tastic… I nailed it!

 

Ingredients:

1 (30 oz ) bag frozen hash browns

1 (10.5 oz) can cream of chicken

1/2 stick of butter (melted)

4-5 slices of bacon (fried and crumbled)

1 – 1 1/2 Cups shredded cheddar cheese ( I use mild)

Directions:

Preheat oven to 350 degrees

Pour frozen hash browns in a greased 13 X 9 cake pan and spread them out evenly. Pour half a stick of melted butter evenly over the frozen hash browns.

Next use a spatula and spread the cream of chicken soup over the hash browns (like you are icing a cake).

Sprinkle with  shredded cheese and crumbled bacon.

Bake un-covered for 45-50 minutes or until the hash browns are soft and the cheese is browned.

p.s. Don’t look at the little bite missing from the corner… Oops! LOL

Breakfast Burger

 

The other night I asked my  husband what he wanted for supper, he said something with beef, easy enough, right? So I looked in the freezer and saw  a pack of frozen hamburger patties and some frozen hash browns and this is what I came up with.

He told me this was the best burger he ever ate. Easy to make + budget friendly = a win for me! 🙂

** Next time I make this I will add bacon!

Ingredients:

2 frozen hamburg patties

2 slices of cheddar cheese

3 pieces of bread ( I used Italian)

2 cups frozen hash browns (seems like a  lot but they shrink when they cook)

butter for toasting the bread

vegetable oil for the bottom of the pan

1 egg

spicy sauce ( recipe below)

Directions: 

It is easiest to use 2 frying pans for this, once has to be a cast iron skillet so it can go in the oven later. In a cast iron skillet over medium high heat and a little vegetable oil  start your burgers because they will take the longest to cook. In a second frying pan over medium high heat and a little vegetable oil start frying hash browns, fry them until them until they are browned and add some salt and pepper to them. Next take hash browns out of pan and set aside. Using same pan that hash browns were in begin to toast the bread. take 2 pieces of bread and butter and toast both sides until golden brown. With the third piece of bread butter both sides but only toast one side. The un-toasted side will be the bottom of your burger and will get toasted when burger is assembled.  By this time burgers should be done. Add 1 piece of cheese to each burger and once it melts it is time to assemble your burger. Turn  burner with burgers (which will be the cast iron skillet) off and turn oven to 350 degrees while assembling burger. Lay the the piece of bread that was only toasted on one side down first, un-toasted side down. Spread spicy sauce on toasted part. Then lay 1/3 of hash browns down, 1 burger, piece of toasted bread, spread spicy sauce on bread, 1/3 hash browns,another hamburger, 1/3 hash browns. Turn oven off and turn broiler on high. Now  its time for the tricky part…the egg! Turn oven off and turn broiler on high. There should be enough grease in the skillet for the egg, if not you can add a little butter so it doesn’t stick.  Put the assembled sandwich on one side of the skillet and crack an egg on the other side. Cook egg until it is firm enough on the bottom to lift up with a spatula and place on the burger ( this usually takes about 1 minute on my stove). Make sure to salt and pepper your  egg. Using spatula carefully place egg on top of the burger.  Now take the entire skillet and place in the oven under the broiler. This also takes about 1 minute. Just leave under enough for the egg to get firm but not so long the yolk cooks and you have no dippy. Take sandwich out of oven and top with the last piece of bread. Enjoy!

This spicy sauce that I use is a recipe that I got from a former co-worker.

Spicy Sauce:

3 Tbsp. Mayo

1/2 tsp. ketchup

Tabasco sauce (as much or as little as you like)

Mix everything together, it should be slightly pink in color.
