Lasagna Sandwich on Texas Toast

As a kid, I was never really a huge fan of lasagna. My mom used to hide onions in it and then swear up and down she didn’t put any in. Yeah, okay mom (insert eye rolling emoji). I remember folding my garlic bread in half and stuffing it with lasagna or spaghetti to mask the taste of the onions.  But as I got older I learned that if I made Lasagna my way, extra mozzarella, hold the onions,  I actually loved it! And let’s not forget a nice thick slice of garlic bread or Texas toast to slop up the extra sauce. For me, this is actually the best part of the meal!

(*I know that half a pound of ground beef does not seem like a lot of meat but trust me it’s PLENTY. There will be enough to make 4 sandwiches, I promise 😉 )

After pondering this for awhile I thought to myself why wait until the end of my meal to fully enjoy it? Why not enjoy every bite? So I decided to stuff loads of lasagna meat sauce and extra mozzarella between two slices of Texas toast. It was AMAZING! And probably one of the quickest warm meals I have made in awhile. Every bite left me totally satisfied and wanting more. I had to stop myself from eating another sandwich… it was so tempting. If you decide to eat two there will be no judgment coming from me, I totally get it.

Side Note: When making these sandwiches it is very important you do not overcook the texas toast. If you do, you’re sandwich’s will be very hard to eat. Since the texas toast will get wrapped in foil and go back in the oven I use the lesser cooking time of the Texas Toast package.

Guys, I did it! I made the worlds best roast beef sandwich! Okay, maybe not the “world’s” best but it’s good.. dang good. It’s sloppy, gooey, and warm,  with a hint of spice. Do not even get me started on the cheese. This is the kind of sandwich you want to make for your friends, you know, the ones who don’t judge you. The friends that don’t care that you ate 2 sandwiches in your jammies at noon while binge-watching the office. Because those are the friends that will join you in your shenanigans. And because THOSE are the friends who deserve to indulge in the world’s best roast beef sandwich with you!

I served these ham salad sliders at our super bowl party along with some other recipes that came by special request including my Buckin’ Bronco Nachos. I always like serving my recipes to a small crowd to get their reaction before posting them to my website. And I am proud to say that these sliders got rave reviews!

While I was preparing the Sliders, I heard a few grumbles coming from the living room about the pickled eggs. I thought I would be nice and make a few without pickled eggs. Well, no surprise to me, the only ones left over were the ones without pickled eggs. If you are a little skeptical about the pickled eggs you should, at least, give it a try. I once heard Paula Deen say something like this ” The first time you make a recipe follow it exactly, the second time make it your own” I think Mrs. Deen has the right idea. So when you make them please, please, at least, try the pickled egg, do it for me and do it for Mrs.Deen. 😉

I like creating recipes that are quick and easy but pack a flavorful punch. These little sliders have it all! The sweetness from the pretzel rolls, savory ham salad, a tang from the pickled egg, and let’s not forget the spicy mustard sauce. They are seriously like little flavor bombs. When I made them I used a combo of both mini pretzel rolls and mini bagels, they pretzel rolls are better… way better. The bagels were good but they didn’t add the sweetness that the pretzel rolls offered. You could always do what I did and try both the mini pretzel rolls and mini bagels to see which you like best. I hope you enjoy. =)

If you are looking for a way to spice up a boring ole grilled cheese sandwich, this is the recipe for you. Trust me; this is not your momma’s grilled cheese. It’s loaded with bacon, minute steak, and of course french fries; but what really takes this sandwich to the next level is the chili srachara mayo that is smothered on the top and bottom of this sandwich.

** This would be a great recipe to use up left over french fries from take out!

Lets cut to the chase; shall we?

Ingredients for 2 sandwiches:

4 pieces of bread ( I used the pre-sliced Italian. Do not use thick slices of bread)

6 slices of cheese  ( 3 for each sandwich. I used velveeta single slices because it most resembles the cheese they put on loaded cheese fries)

3 minute steaks ( cut up and cooked)

4 pieces of bacon (cooked and crumbled)

French Fries  ( enough to load it up! Depends on the size of the fries how many you use 😉 )

Butter for grilling the sandwiches

Hot Chili Sriracha Mayo 

4 Tbsp. mayo

2 tsp. hot chili Sriracha

Mix together


First butter one side of each piece of bread and grill it. This makes your bread more sturdy so it can hold the sriracha mayo without making your bread soggy.


Once you have toasted one side of all four slices of bread, spread them with the Sriracha Mayo. You want to spread all four slices with the Sriracha Mayo. my photo only shows 2 slices spread.


After all four slices are spread with Sriracha Mayo on the toasted side then it is time to start layering. Split the crumbled bacon between the two sandwiches. I lay my bacon on top of the Sriracha Mayo and then place 2 pieces of cheese on top of the bacon and then load up those fries.   (I do it the way so that as it grilles the cheese acts as a glue to the bacon and the fries)


Load it up with fries! I am drooling now! =p

On the other half of the sandwich which has all ready been spread with the sriracha mayo, split the minute steak between the two sandwiches and lay it on top of the Sriracha Mayo.


Lay one piece of cheese on top of the minute steak.


Now for the tricky part; carefully put the sandwiches together. To do this I pick up the part with the minute steaks using two hands and quickly position it over top the part with the fries. Then butter your pan and grill the sandwich, pressing it down with a spatula. Once the bottom of the sandwiches are grilled to a golden perfection then carefully lift the sandwiches off of the frying pan. Add more butter to the frying pan and carefully flip the sandwiches to grill the other side.. I use my hands to flip it into the pan (But be CAREFUL not to burn yourself!)



** If your cheese is not melting fast enough, put a cover over the  frying pan ( I used a cookie sheet)  to trap the heat. This will allow the cheese to melt more quickly.

Crackers with Peanut Butter & TOASTED Marshmallow… Dipped in Chocolate!



I am soooooooooooooooooo so so soooooooo excited about this post for sooooo many reasons! First and for most I get to tell you all a little about my bloggy friend Prudy over at Butter Basil and Breadcrumbs. She has been such a support throughout this whole learning to blog process… we are learning together. Anytime I have a question or concern I always know that I can count on Prudy to help me out, and if she is unsure she does her best to lead me in the right direction. We have both learned that blogging is not an over night success but we know we are on the right track, and in time, this track will lead us to the success that we have been dreaming for. Plus we promised each other a signed copy of  our first cook books so we have to make this work… a promise is a promise 😉

Reason number two for being so excited about this post… My midnight snack just got a whole lot TASTIER! when I get hungry at night I always take a round cracker, spread it with peanut butter, sprinkle on a few chocolate chips and a few mini marshmallows ( ok 3.. it has to be 3 mini marshmallows or it is not right! ) then I put it in the microwave till the marshmallows puff up then top it with another round cracker. YUM! Well, Mrs. Prudy whom I mentioned above made this AMAZING looking Hot Chocolate smoothie that she topped with a toasted marshmallow. That’s how my wheels started turning with my crackers with peanut butter & TOASTED Marshmallow dipped in Chocolate… WOW! That’s a mouth full! Try saying that 3 times… no, no,  don’t do that to yourself. LOL

Reason number 3 well… just look at that photo! I am in love! Photography has been something that I have been desperately trying to learn and I feel like I nailed it with this one. I am really not trying to brag, really. I am just very excited =)


Now that you have heard my speech lets get to this recipe!

* Recipe is for 16 crackers with peanut butter and TOASTED marshmallow dipped in chocolate…Depending on the brand of crackers you use, 1 sleeve will make about 16 of these.


1 sleeve of round butter crackers ( something like ritz)

8 marshmallows cut in half ( the medium size marshmallows.. not the mini’s and not the jumbo)

6 oz of semi sweet chocolate chips or more depending on the brand used and how many in a sleeve.  ( Honestly I would use whatever I have when I make them again.. Dark chocolate, white chocolate..)

** You are going to need was paper & foil for this recipe


1.) Spread all 32 crackers with peanut butter, set 16 aside and place the other 16 peanut butter side up on a cookie sheet that has been lined with tin foil.

2.) Cut all 8 marshmallows in half and place one on top of the 16 peanut butter spread crackers on the cookie sheet.

3.) Set your oven to Broil and put the crackers in. DO NOT WALK AWAY! Watch them till they get nice and golden brown.. I like mine a little on the burnt side. LOL

4.) As soon as they come out of the oven take the crackers that have been spread with peanut butter and set aside, and place one on top of each marshmallow.

5.) Set them in the fridge for about 10 – 15 minutes.

6.) Melt chocolate in a microwave safe bowl ( I add a few drops of veg. oil to it). When melting the chocolate only microwave for 30 seconds at a time stirring each time till chocolate is melted.

7.) Take the foil off of the cookie sheet you used to toast the marshmallows and line it with wax paper ( doing it this way saves a dish!)

8.) Dip the crackers in chocolate one at a time and line them onto the cookie sheet you lined with wax paper.

9.) Refrigerate until chocolate is firm

10.) ENJOY =) =P.
