Breakfast Chicken

7-8 Â Eggo Waffles toasted
1/2 pack of bacon Fried and crumbled
1 C. shredded cheddar cheese
3-4 Â eggs
1 C. flour
maple syrup
Directions:First fry bacon and set aside. Toast waffles golden brown in toaster (this can be done while frying bacon). Next rip waffles in large pieces and place waffles, cheddar cheese, and bacon in food processor. Process until mixture turns into the texture of bread crumbs. Set aside. Next wrap 1 chicken breast at a time in a piece of wax paper and flatten each one using a rolling pin or meat tenderizer until they are each about 1/4 inch thick. Place 1 cup of flour on a paper plate. set aside. Scramble 4 eggs in a large bowl and set aside. Place waffle crumb mixture on a third plate. Turn electric skillet on to 350 degrees and wait till it gets hot. Now drizzle skillet with oil and while oil is getting hot dip each chicken breast one at a time in flour, then egg, then waffle mixture. Cook on skillet until cooked completely through, about 5 minutes on each side. Once fished drizzle with maple syrup and enjoy. This serves about 4.
