Chive & Onion Mashed Potatoes

Ingredients:
5 lbs potatoes. ( Peeled, washed, boiled & Drained )
1/2 stick of butter
1/8 tsp. garlic powder
1 Tbsp. parsley flakes
2 Tbsp. chive & Onion cream cheese
1-1/4 C. heavy cream
salt and pepper to taste

Directions:
In a large mixing bowl place half a stick of butter, next dump hot potatoes that have just been drained over the butter. Using a potato masher mash potatoes. Add heavy cream and using a hand mixer mix until smooth and creamy. Next add garlic powder, parsley flakes, onion and chive cream cheese, and salt and pepper. Using hand mixer blend again until smooth and creamy. Enjoy 🙂

How to boil potatoes:
peel and wash potatoes. cut into small chunks ( about 1 inch chunks ), place in a medium size  pot ( I use a dutch oven) . Fill pot with cold water enough that it covers the potatoes. Add 1 Tbsp of salt to the water. Place on high heat until potatoes come to a boil ( you may have to turn heat down a bit if potatoes start to boil up over). Boil for about 20 minutes or until potatoes can be easily pierced with a fork, if there is tension the are not yet ready.. boil an additional 5-10 minutes. Once potatoes are ready place a strainer in a clean sink and pour potatoes into strainer. Follow above recipe for chive and onion mashed potatoes.
