Banana Whoopie Pie Cake
While grocery shopping this past week I discovered that bananas were on sale for .19 cents a pound. I knew this would be a great time to stock up for recipe testing. Do you remember that delicious chocolate whoopie pie cake I posted a while back? Well… I thought, how good would a banana whoopie pie cake be? So I rearranged a few ingredients, and to my surprise the recipe turned out perfectly on the very first try! That doesn’t happen often, but when it does I celebrate! This time with lots of Banana Whoopie pie cake!
This banana whoopie pie cake is everything I dreamed it would be. The cake is moist and banana-ie (I know that’s not a word but it totally should be!). And the filling is sweet with a hint of vanilla. These cakes are so easy to make. The hardest part about making them is flipping the one cake on top of the other. It’s best to let the cool for about 20 minutes before turning them out.

- 2 Large ripe banana's ( or 3 small/medium sized bananas )
- 2 eggs
- 3 Cups flour
- 1 Cup oil
- 1 Cup Buttermilk
- 2 Teaspoons baking soda
- 2 Cups sugar
- 1 Cup Hot Water
- 1 Teaspoon vanilla
- 1 Cup Crisco
- 2 egg whites
- 2 Tablespoons milk
- 1 Teaspoon vanilla
- 1 Pound 10 X Sugar ( aka powdered sugar or Icing sugar)

- Preheat oven to 350 Degrees. In a medium/large mixing bowl add bananas and mash them up well. Add the rest of the ingredients for the cake. Mix well until batter is smooth. Spray 2 (15 X 10 ) Cookie sheets well with baking spray or if you do not have baking spray grease and flour both pans. Bake for 15-20 minutes or until inserted toothpick comes out clean. Allow cakes to cool completely in pan. Once cakes are cool, spread the filling on one of the cakes. Then carefully flip the cake without icing on top of the cake with icing.
- Add all ingredients to a medium sized bowl. Use a hand mixer and mix until fluffy.
