I thought I would keep this week’s recipe super simple. We have been on the go for the past few weeks and I haven’t had much time to edit new recipes. I do have plenty of cool ones coming soon, though!
One of my favorite things to eat after a holiday is one of these BLP’s. It’s a delicious way to use up any left-over pickled eggs before they go bad. Normally, I will add leftover turkey to this sandwich, but we had ham instead of turkey this year for Easter. You could add ham to this sandwich instead of bacon, but I really enjoy the taste of the crispy bacon with the pickled egg. It adds a pleasant texture to this sandwich.
I was a pre-teen the first time I sunk my teeth into one of these sandwiches. I watched as my gram made one and I really thought it looked gross. That was until she talked me into making one of my own. I loaded it up and took one bite and was hooked. Now I make myself one of these sandwiches after almost ever holiday meal.
If you have any leftover pickled eggs from Easter, I hope you will give this sandwich a try! If you don’t have any leftovers, it would be worth your while to make a batch so you could enjoy one of these delicious BLPs.

- 2 slices bread (toasted)
- 2 Slices bacon (fried & grease drained)
- 1-2 pickled eggs (sliced, I use 1 1/2 pickled eggs on my sandwich)
- lettuce
- Mayo
Ingredients

- Toast bread and spread mayo on each slice. Assemble sandwich and enjoy!
