Butternut Squash Cookies
I am always trying to come up with ways to sneak healthy foods into my sons diet. These butternut squash cookies were a success, he loved them and got to enjoy a sweet while still getting some benefits from the butternut squash. =)

Ingredients
- 2 cups butternut squash (peeled and diced)
- 1 stick butter
- 1/2 Cup brown sugar
- 2 1/4 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. vanilla
- 2 eggs
- 1/2 cup sugar
- 1 tsp. cinnamon

Instructions
- Preheat oven to 375 degrees In a medium sized frying pan, on medium high heat, add butter, wait a few seconds till it starts to melt then throw in squash. Cook till squash becomes mushy. Once squash is cooked threw and mushy use a wooden spoon to mash it down so there are no big chunks. Next add brown sugar to the pan and stir well. Cook for about 1-2 minutes. Turn off heat and set a side to cool. A a medium sized mixing bowl add flour baking soda, salt,vanilla,eggs, sugar, and cinnamon; mix well. Once the squash mixture has cooled (about 5 minutes) then add it to the mixing bowl with the rest of the ingredients. Mix well. Drop by teaspoons full onto a greased cookie sheet. Bake for 8-10 minutes.
