It’s hard for me to think about a S’more without thinking of the smell of a campfire and the sounds of crickets chirping and the stillness of a star-filled sky. S’mores definitely bring me back to being a kid and sitting around the fire pit. It was early on when I learned that there are two kinds of people in the world: Those who like their marshmallows a nice golden brown, and those who like their marshmallows burnt. I happen to be in the “burnt to a crisp” category. If you prefer golden brown, then we can’t be friends.. Just kidding!

In all seriousness, that’s what I love about this recipe! You can make your marshmallows as toasted brown or as burnt as you’d like. Although I will warn you to be cautious when going for the burnt effect since we are using an oven and you wouldn’t want to burn your house down making this recipe!
Let’s talk a little S’more about this S’more! The toasted marshmallow in this recipe leaves your taste buds thinking they are actually eating a real S’more. I’ve put all of the components of a s’more into one tasty cheese ball! Some great options for dipping in your cheese ball would be graham crackers, animal crackers or vanilla wafers. When making this cheese ball, it’s very important that you grease your kitchen beaters very well. Otherwise, the marshmallow will stick to the beaters and you will have a big mess on your hands! I also want to add that I recommend spraying your parchment paper with a butter flavored non-stick spray. Since you won’t be baking this recipe, the flavor will be slightly more noticeable.

  1. Line a cookie sheet with parchment paper and add 9 marshmallows. Toast the marshmallows under the broiler to your liking. It's important not to walk away from them while doing this as they'll burn quickly!In a mixing bowl add cream cheese, butter, brownie mix, powdered sugar, half of the crushed graham crackers, vanilla, 1/2 cup mini chocolate chips, and toasted marshmallows. Spray mixing beaters well with cooking spray. Slowly begin to mix on low speed. As the marshmallows start to climb up the beater, stop the mixer and push marshmallows down with a greased spatula. You will have to do this a few times until the toasted marshmallows get mixed in. Once marshmallows have been mixed, continue mixing until all ingredients are mixed. Cover with plastic wrap and refrigerated for at least 4 hours. Right before taking mixture out of refrigerator, mix remaining crushed graham crackers with 1/2 cup of mini chocolate chips and pour mixture on a plate. Take take S'more mixture out of the refrigerator and use hands to form into a ball. Roll ball into crushed graham cracker and chocolate chip mixture. Serve with vanilla wafers, graham crackers, and teddy grahams.
