Southwest Chicken Burger 
There is no denying my love for Mexican food! I could probably eat tacos every single day and never grow tired of them. My family does not share this love of mine, so I don’t make Mexican food at home very often. Telling your kids to eat their veggies is one thing, but asking them to finish their tacos and guac is probably frowned upon in today’s society. Everyone is typically working on being healthy!
For not being a huge fan of Mexican food, my husband sure did enjoy this burger. He even asked me if I had used ground beef to make them. He was surprised to find out that this delicious burger was actually comprised of ground chicken! My husband loves beef, so he was surprised at how much flavor was packed into these burgers!
Though the southwest chicken burger is made from ground chicken, ground beef would taste great as well! By using ground chicken I was able to cut back on some of the fat content that the ground beef would have. I wanted these burgers to be big and filling! They definitely are. But sometimes big, flavorful and filling meals have a lot of fat and calories, which is why I opted to use ground chicken instead.
If you wanted, you could definitely get 1 or 2 more burgers out of this recipe. I would suggest using a regular hamburger bun if you make them smaller. Using a large ciabatta bun may drown out some of the burger’s flavor if the patties are smaller. I’m mentioning this because if I were in a bind I might try to get a few more burgers out of the recipe and use Hamburg buns, but I wouldn’t recommend that. When you have a thick burger, the ciabatta buns just make it taste so delicious, especially with all the yummy toppings.
So, let’s talk about these yummy toppings!  The sky is the limit on this burger. I added all of my favorites which are refried beans, black bean salsa, avocado, southwest sauce, and Doritos! Next time I may even add some sour cream.
I do want to note that the taco seasoning flavor in this burger is very strong. I really like it, but if you are not a fan of stronger flavor, then I would add a half of a pack of seasoning rather than a full pack.

Instructions
  1. In a mixing bowl add ground chicken, taco seasoning, egg, crushed Doritos, and cheese. Use hands to mix everything together. Form into 4 patties. Drizzle frying pan with olive oil. Cook patties on a medium high heat until cooked all the way through. This takes about 8 minutes on each side. Put patties in buns and top with all your favorite toppings.
