Stuffed Chicken & Shells Casserole
Lately, I’ve been glancing through a lot of the old cookbooks I inherited from my Nana. In one of the books, I came across a recipe for Chicken Stuffed Shells. The recipe looked delicious, however, the directions had more steps than I cared to follow. Since I can sometimes be lazy in the kitchen I decided to simplify this recipe by turning it into a casserole. I liked the idea of the shells but, hated the idea of stuffing each one individually which would take a lot of time. Instead, I decided to use a box of mini shells. Doing it this way not only saved me some time in the kitchen but it also allowed me to cut back on some of the fatty mayonnaise.
This hearty casserole is very filling and the perfect meal for a cold winters day. Not only is this casserole easy to make but it is also budget friendly. This is one of those recipes that I normally have everything on hand to make. I love keeping these kinds of recipes around. Those type of recipes are great for those days when you need to get to the store but can’t. (The way winter has been this year I have days I can go to the store but just don’t want to leave the house. It seems like it snows every week! )

- 1 Box Stove Top Stuffing
- 1 1 pound box of shells
- 2 Large Chicken Breasts (Cooked & Cut into bite size pieces)
- 2 -15 oz. Cans cream of chicken soup
- 1/2 Cup Mayo
- 1 -15 oz. Can Chicken Broth
- 1/2 Cup Cheese

- Pre-heat oven to 350 degrees Prepare stove top stuffing according to microwave instructions on box; set aside. Boil shells according to aldente directions on package, drain and pour into a greased 13x9 casserole dish In a mixing bowl add cooked chicken, cream of chicken, mayo and mix together. Pour mixture over shells in casserole dish and gently mix. Add chicken broth evenly over noddles. Add stove top stuffing over noddles. Cover and bake at 350 degrees for 20-25 minutes Add cheese and bake uncovered for an additional 5-10 or until cheese has melted.
