Biscuit Dough Caramel Apple Dessert
Spring has finally sprung and tonight is man night out our house! Are you wondering what man night is and why I’m so excited about it? Man night happens at our house about once a month. It is a special night where my husband and son watch movies all night and pig out on junk food. My husband will call man night sometime in the middle of the week. Once this happens I hear the two of them secretly talking about what snacks they will get and movies they want to watch. I hope someday my son will look back and remember this special time he shared with his dad; it’s the sweetest thing. Maybe even carry on this tradition with his own children someday.
Still wondering whats so exciting about man night? So let me explain.When they say man night I actually hear mom night. Can you say Netflix?! After 7 pm the night is mine and I am totally free of mom things. Which means I am free to do things like binge-watch Netflix, take a warm bubble bath, go to Walmart (sorry, I love the place), movies with a friend, make these Warm Biscuit Dough Caramel Apple Desserts and eat them all by myself, etc..
I was totally kidding about that last part. I couldn’t eat them all by myself even if I wanted to and believe me, I’d want to. These buttermilk biscuits are stuffed with apple pie filling and served warm with a scoop of vanilla ice cream then topped with caramel sauce and crushed peanuts. These dessert biscuits offer all the great flavors of a warm apple pie and without all the hassle. Because apple pie is one of my husband’s favorites I know I will be making this recipe often!

- Preheat oven according to biscuit dough packaging: Roll each biscuit out until biscuit dough is doubled in size. Gently press rolled dough into a well-greased muffin tin. Scoop in apple pie filling so its even with the top of the muffin tin. Gently press sides of dough in. Bake according to biscuit dough packaging or until tops are golden brown and dough is cooked. Serve warm with a scoop of vanilla ice cream. Top with caramel sauce and crushed peanuts.
* If you like a softer apple cook the apple pie filling on the stove top on medium-high heat for about 20 minutes before filling biscuits in the muffin tin. Stir constantly and do not walk away as it will burn quickly.
