Super Hero Pasta
If you are looking for a fun pasta to take on a picnic you will have to try my tangy super hero pasta!
I have decided to name this super hero pasta in honor of my son. He is 2 years old and has been asking for a super hero outfit, so… I thought since this pasta is green and made from spinach the name is fitting. 🙂
8 Cups raw spinach
1 cup Italian dressing
1/2 cup shredded Parmesan cheese
5 slices of bacon (cooked & cut into small pieces)
1-2 boneless skinless chicken breasts ( fully cooked and sliced into small bite size pieces)
1 cup of cherry tomatoes
1 cup pearl mozzarella cheese
1 – 12 oz. box penne noodles cooked & cooled (cook according to al dente directions)
* Adding the chicken is option but makes it into more of a meal rather than a side. If I am making this as a side I leave the chicken out. =)
Using a food processor, add 4 cups of raw spinach, 1 cup of Italian dressing, & 1/2 cup of shredded Parmesan cheese. Process until a sauce is formed. Add the other 4 cups of raw spinach and process until blended into the sauce. If you have a food processor that is big enough you can just add everything at one time ( mine only holds 4 cups of raw spinach so I have to do it this way). In a large mixing bowl add cooked pasta. Next add 1/2 of the green spinach sauce to the noodles along with bacon slices, chicken pieces, cherry tomatoes & pearl mozzarella cheese. Cover and refrigerate both the pasta and the green spinach sauce. Pour the rest of the sauce over the pasta about 30 minutes before serving.
