    Lasagna Sandwich on Texas Toast As a kid, I was never really a huge fan of lasagna. My mom used to hide onions in it and then swear up and down she didn’t put any in. Yeah, okay mom (insert eye rolling emoji). I remember folding my garlic bread in half and stuffing it with lasagna or spaghetti to mask the taste of the onions.  But as I got older I learned that if I made Lasagna my way, extra mozzarella, hold the onions,  I actually loved it!     * Warning: these are very addicting. Ingredients:  1 – bag cheese tortellini’s 1 – Cup breadcrumbs ( I used plain) 2 – eggs 1 -Cup Mozzarella cheese 10-15 pepperonis ( diced into small pieces OR you could buy a pack of the mini pepperonis) Directions: * I use a deep frying pan to fry these. Make sure your oil is hot enough before you put your tortellini’s in or they will get soggy. I have never used a deep fryer for these but it could be done that way, as well.     This is one of my favorite recipes! Anytime I make Chili I always double the recipe so I have enough to make this amazing chili pasta casserole. Ingredients: 2 1/2-3 Cups left over Chili 8 oz. block of Monterey Jack cheese cubed 8 oz. Monterey Jack cheese shredded 1 Tbsp. butter 1 1/2 Cups heavy whipping cream 1- 1lbs. box penne pasta Directions: Cook pasta according to package minus 3 minutes. Drain pasta and set aside. In a medium size sauce pot over medium heat add butter, cubed Monterey jack cheese, chili, and heavy whipping cream. Cook until cheese is melted. Next pour pasta into chili mixture and stir so…
