White Mountain cake & cupcakes Recipe & Peanut Butter Fudge Frosting =)

I’m not quite sure where this recipe came from originally but it was somehow passed to my family from a very good friend, the type of friend you consider family. His name was Jack, he was the sweetest man you would ever know. He loved kids, the more rotten of a kid you were the funnier he thought it was, that was just the kind of guy he was. He loved to laugh and hadn’t a care in the world or so it seemed. Years ago Jack suffered from a stroke, he could no longer walk or talk and was placed in a nursing home. This broke my heart, it’s tough seeing bad things happen to good people. I used to take him a Dunkin Donuts coffee and a chocolate iced donut, his favorite! I would sit there and watch him devour his O so good donut and slurp down his coffee… he didn’t have to say thank you, the look in his eyes said it all. It didn’t matter that he couldn’t talk, he just wanted someone to be there, a familiar face. Jack also had a love for music, O’ how he loved to sing, and he could! He knew every word of every song and sang it beautifully. Isn’t it funny how he could not talk but could sing every verse to jingle bells? I think music made him feel alive and like there was still hope. Sadly Jack passed away in the nursing home, but he will always have a special place in my heart till we meet again in heaven.

 

White Mountain cake

 

Ingredients:

2 Cups sugar

1/2 Cup shortening

1 Cup cold water

2 Cups flour

2 tsp. baking powder

1 tsp. vanilla

4 egg whites

 

Directions:

Preheat oven to 350 degrees

In a large mixing bowl add sugar and shortening, using a hand mixer cream together. Next add water,flour,baking powder,vanilla and egg whites. Using hand mixer mix everything together until well blended. Pour batter into a greased  13 X 9 cake pan and bake at 350 degrees for 35-40 minutes.

 

Cup Cakes:

Do everything the same as above except this time line a cup cake pan with cup cake papers and put about 1/4 of a cup ( I used a cup cake scoop) into each cup cake paper. This should make about 18 cup cakes. Bake at 350 degrees for 15-20 minutes or until inserted toothpick comes out clean.

Peanut Butter fudge frosting:

*This recipe is very similar to moms icing recipe.

Ingredients:

2 egg whites

4 Tbsp. Flour

1 cup peanut butter

1 tsp vanilla

1 pound 10 X sugar

2-4 Tbsp milk ( start with 2 Tbsp. and add more if needed, never any more than 4 Tbsp)

 

 Directions:

In  a medium size mixing bowl add all ingredients, mix well using a hand mixer.
